Cooked again!

This time for Grandma, made what was supposed to be Spinach Fettucine,  Corn and Red Peppers. But the pasta choice is a mistake! It needs chunky pasta.  Also substituted cilantro for parsley and then tarragon for oregano.

Saute diced red pepper with 1/2 tsp red pepper flakes for about 5 minutes.  Then add 4 sliced scallions, 2 cups thawed frozen corn kernals, handful chopped cilantro, tarragon and basil. And salt. Saute for a few more minutes.  turn to low

When pasta water has boiled, add pasta (I suggest short chunky pasta), after it cooks, reserve 1/2 cup pasta water and add to corn -pepper mix.  Drain pasta and return to pot or put in large bowl. Add corn-pepper mixture on top, top with grated Parm cheese and more fresh cilantro.

Toss, serve.
