I think I've lost another pound. This is good. I'm not trying to lose weight but I'm definitly not gaining. Also good. The only changes I've made are 1) vegetarian at home and 2) not eating out for the most part. If Mom wants to take me out... YAY! But other than that no eating out. Still snacking, but I'm getting better. Splurged for Kashi Go Lean and have eaten that in the mornings with Soy milk...however soy milk doesn't exactly agree with me so my next step is either breakfast/granola bars or try lactose free milk.

This afternoon I had a late lunch and now left overs for tomorrow and the next day. I made a bean and corn dish over home made corn bread. My oven doesn't heat properly so the corn bread ended up under done, which I'd rather have than over done. I'm now on the prowl for an oven thermometer.

Have no idea what to call this but here's what I made

olive oil
2 small bell peppers, sliced
2 small onions, diced
2 garlic cloves minced
2 cans (16oz) beans, drained and rinsed. I used Pink and Great Northern, but it could be any.
most of a 10 oz pkg of frozen corn
1 can RoTel
cheese
fresh cilantro
cumin (I think 1 tsp...I never measure with spices and dried herbs)
chili powder (probably 1 1/2 tablespoons)
basil
thyme
red pepper flakes
salt and pepper

Saute peppers, onions, and garlic in oil until tender. Season with salt and pepper, cumin, chili powder, basil, thyme and pepper flakes. Adjust seasoings to your taste. Add beans, stirring to combine. Let cook for a couple of minutes. Add frozen corn, stir to combine and heat through. Taste and adjust seasonings. Add can of Ro Tel, bringing the mixture to a boil, then lowering to a simmer. Cover and cook for a few minutes.

When it's heated through and tastes right, spoon mixture of slice of corn bread, top with grated cheese and chopped cilantro.

I stirred in more cilantro right before I put everything in containers for leftovers. I grated a bit of cheese over each one. Also I sliced zucchini and cooked it seperately with almost no seasoings, since I had leftovers of that I layered the beans, zucchini, and then the cheese.

Rice milk is quite nice on cereal. That might work out better for you.

I'll have to try that. I have a co worker that drinks rice milk, he'll probably let me try some of his.
