Finally I'm cooking and it doesn't seem like a chore (and it will seem like less of one when my dishwasher works right).

The other day I made a bean dip with my new food processor but it was a bit bland, so maybe I'll fool around with it.

Tonight I made Kale, Pasta, and White Beans from the same cookbook that was -- bland. Not bad but it needed something.  It was really easy  - take 1 1/2 lbs of kale, clean well and tear into bite sizes pieces, mince 6 cloves of garlic (my food processor rocked this), have pasta, red pepper flakes, oil, salt, and white beans.

heat oil in large skillet, saute garlic and pepper flakes for 2 minutes, add kale oh! and 1/3 cup of veg broth  and stir letting it wilt down, and then cover and steam for 7 minutes.  (Meanwhile cook 1/2 lb penne pasta).  Once the kale is steamed, add 1 rinsed and drained can of beans, and 1/2 tsp of salt, stir and keep warm.  Drain pasta, fold into kale,

Here I deviated -- clear a space in the center and add 1 tbs of butter letting it melt and folding in the pasta/kale mix, then fold in 1/3 cup shredded parm cheese (the orginal called for the cheese) and then I added soem dashes of red wine vingear but next time I'm going to try the juice of 1/2 a lemon.

And maybe omit the beans and add some quartered baby portabellos, it needed another bit of texture in there.

But it was good and yay cooking!
