In (some) computing environments, the star stands for any number of letters, instead of just one. I reckon it's a usage that came from computerisms, representing both veg(itaria)n and veg(a)n. Plenty of computer geeks are (unlike me) veggies and/or vegans.

After I asked the question I went and checked one of the FAQs. Although I have seen a few posters refer to themselves as "veg*n" which kind of threw me.

In which case, they probably meant "somewhere between vegitarian and vegan, i.e. I cheat now and then". Either that, or they just weren't hip to the lingo... ;-)
